Confession time: like most great ideas, I didn't come up with Farm Cart all on my own. I've borrowed heavily from a service I subscribed to and loved being a part of in Salt Lake City. For our first-ever delivery, I wanted to pay homage to the source of my inspiration by including one of our favorite recipes from that time. It makes a great appetizer, or could be the main dish of an Asian-inspired meal.


Asian Beef Lettuce Wraps


What you'll need:

1 Tbs vegetable oil

1 lb ground beef or other ground meat

1 Tbs fresh ginger, minced (or 1/2 tsp ground)

1 Tbs fresh garlic, minced

2 green onions, chopped

2 Tbs soy sauce

1/4 tsp red pepper flakes

1/4 C hoisin sauce (you can buy this in the asian foods section or make your own)

1/2 C grated or shredded carrot

1 head bibb lettuce, leaves separated and washed

Optional toppings: chopped cilantro, chopped peanuts


Heat oil in a large pan over medium heat, saute the meat, ginger, and garlic together until meat is no longer pink. Stir in green onion, soy sauce, red pepper flakes, hoisin sauce, and carrot. Cook 3-5 minutes more, stirring occasionally. Taste for seasoning. Spoon onto lettuce leaves just before eating and top with cilantro, peanuts, or your prefered topping. (Vegetarian adaptation below!)


3 Ways to Eat Radishes

  • Chop them up and add them to your coleslaw mix. Coleslaw is so versatile - it can be its own side dish, or mixed with other greens and veggies for a big salad, or used as a topping for tacos, sandwiches, burgers, or even the lettuce wraps. Depending on how you dress it, it easily fits into many different meals.

  • Radish and Feta Toasts: Toast slices of sourdough or baguette or whatever bread you like. You could even try it on crackers. Spread on a layer of feta goat cheese, then a layer of thinly sliced radishes, top with fresh herbs like dill or basil or microgreens if you have 'em, a little salt and pepper, and maybe a drizzle of olive oil.

  • Roast 'em! Roasting radishes brings out their sweetness and mellows their spiciness. Trim the ends, toss with some oil, salt, and pepper and roast in a single layer at 400 F. Cut them in half and they'll roast quicker. Start checking after 10 minutes, and let them get as soft as you like. If you want to go all out, roast them in a pan with a whole chicken (or chicken pieces with skin on for the most flavor) - they'll be the best radishes you ever have!


 

Asian Lettuce Wraps - Vegetarian


What you'll need:

1 C dry lentils

1 1/2 Tbs vegetable oil

1 C bell pepper, diced small or matchsticks

1 C carrot, diced small or matchsticks

1 Tbs fresh ginger, minced (or 1/2 tsp ground)

1 Tbs fresh garlic, minced

2 green onions, chopped

2 Tbs soy sauce

1/4 tsp red pepper flakes - optional for some heat

1/4 C hoisin sauce (you can buy this in the asian foods section or make your own)

1 head bibb lettuce, leaves separated and washed

Optional toppings: chopped cilantro, chopped peanuts


Cook lentils according to package- simmering for 20-25 minutes. Drain and set aside. Heat oil in large pan over medium heat, saute bell pepper and carrot 3-5 minutes to soften, then add ginger and garlic and saute 1 minute more. Add in cooked + drained lentils, green onion, soy sauce, pepper flakes, hoisin sauce and cook for another 1-2 minutes, stirring occasionally. (There's rice wine vinegar and sesame oil in hoisin sauce, but you could add a little more of each to bump up the flavors). Spoon onto lettuce leaves just before eating and top with cilantro, peanuts, or your preferred toppings.
